Who are we?

We are Derby’s local brewer with an award winning beer across every Beer Style, a family run craft business with over 30 years brewing expertise in producing handcrafted premium real ales. We see a growing pub estate as a crucial part of our growth plans, to date we have acquired and fully renovated three pubs winning numerous awards.   

We are passionate about quality and individuality, each of our venues are individual with their own style, drink and food offering. Our current venues include a specialist drinks pub (The Tap), a quirky city centre venue (Greyhound) focused around craft beer and street food and a destination cosy village pub (Queens Head) focused around great drinks and tasty Gastro style food.  

Across all our pubs we are passionate about food and only produce & sell fresh, homemade food, which is made from scratch using the finest locally sourced ingredients.  

The Kedleston Country House is something completely different, located on the Kedleston estate in a grand Georgian building designed in a modern country house style, the venue includes a relaxed drinking area, a 75 cover restaurant, an Orangery suitable for private hire, weddings or additional restaurant space of 75 covers. In addition there will be a formal Georgian Gardens capable of housing Marquee Weddings of up to 200 guests. Finally there will also be five boutique bedrooms.

The role

This is a hugely exciting opportunity to work at an iconic venue and to join our fantastic food team, joining a company with growing reputation for its food.

The food on offer will be modern British cuisine with international twists, a homemade rustic and stylish seasonal menu, making use of our own salad and herb garden, perfect for everyday treats and special occasions.

As part of the role, you will be responsible for assisting the Head Chef and kitchen team in all aspects of the day to day running of any successful kitchen including prepping, cleaning down, ordering, receiving deliveries, cooking the menu, input into  new dishes, meal costing & setting kitchen procedures in place. 

Who are we looking for?

An organised passionate and experienced chef who is enthusiastic about what they do. A chef with ideally experience of large scale quality banquet cooking as well as smaller scale, with experience across the full spectrum of a menu. A hard working committed individual with attention to detail, who thrives in a busy business, with a real passion for fresh homemade food. A people person with good communication skills, who can work as part of a team & work using their own initiative, a good sense of humour is essential.

Responsibilities of the role

The role will include assisting the kitchen team in all day to day aspects of a successful fresh food kitchen, using initiative to ensure the business meets its full potential. An applicant must always embody the standards of the outlet at all times.

The role will include the following key aspects:

  • To cook and prepare all menus to the company standard
  • To maintain a clean and healthy working environment
  • To be flexible and work to business trends
  • To report any feedback/problems to head of department
  • To take in deliveries from suppliers and check to accept the order is correct and quality is acceptable & sign for goods
  • To have an understanding of COSHH and HACCP
  • To always be presentable and dressed in the correct work attire

You will also have input into creating new dishes and menus, this will be done in conjunction with the head chef. In addition it is important that you feel comfortable working in a team and helping to develop staff as you progress.

Skills

We are looking for someone with a true passion for fresh food with some experience in all areas of running a kitchen including menu design, food hygiene, good time keeping and ideally a food hygiene certificate would be looked on favourably, although training would be provided. The ability to work during busy service, working quickly whilst maintaining high quality standards of food and good time keeping is essential.

Hours of work

The role is for a minimum of 24 hours per week, with two days off a week, working 5 days out of 7 which is likely to include weekend work depending on the needs of the business.
